"Breakfast is the most important meal of the day." Youve heard it a gazillion times. But when youve been up late the night before and youre rushing to your first class of the day, you may be tempted to skip breakfast. Or eat a candy bar instead. But if you plan ahead just a little, you can have a quick, healthy breakfastone that will make easier to concentrate during your most boring lectures. Here are some ideas.
1. Good Ol Oatmeal
Oatmeal comes in three types: Instant, quick cooking, and regular. Instant oatmeal, which comes in small packages and is often flavored, is the fastestbut low in good-for-you fiber. If you must use instant oatmeal, at least choose the less sugar variety, but try the quick cooking oatmeal instead. It doesnt take much longer to prepare, but is a lot healthier. Just add some fresh fruit for extra flavor.
2. Healthy Pancakes
To be healthy, make your own whole wheat flour pancakes. Cook them up with blueberries for extra brain power. Then freeze individual pancakes in freezer bags. When morning comes, just pop a pancake or two in the microwave to warm it up. Instead of sugary syrup, top the pancake with peanut butter or Nutella.
3. Good For You Muffins
Make whole wheat or other whole grain muffins and freeze them in individual freezer bags. Set one bag in the refrigerator the night before and it will be thawed by morning. Or, if you forget to do this, you can nuke a frozen muffin. Make sure to add some protein to your muffins. Ham is a nice choice.
4. Fantastic Fruit
Grab some cottage cheese and add a little fruit for a tasty and nutritious start to the day. Or, if you prefer, cube some low fat cheese and eat it with your fruit. For an extra brain boost, add a handful of almonds.
5. Toast with a Twist
Choose a mixed grain bread and add some almond butter on top. Or, if you have a little extra time, top your toast with a cooked egg.
6. Breakfast Burritos
Fill a whole wheat tortilla with a sliced, hard boiled egg, a little ham or Canadian bacon, and ounce slice of low fat cheese. For a dash of extra flavor, add a tablespoon of salsa.
