Christophe Pétra, a young Provencal chef, stems from a long line of chefs and restaurateurs working in Lavendou since four generations. After studying at l’École Hôtelière de Hyères and working with Roger Vergé, Jacques Chibois, Louis Outhier and Paul Bocuse, he becomes chef at l’Hôtel des Roches before opening his own restaurant “Le Sud” in 1997, receiving a coveted Michelin star after only 4 years of operation. His cuisine is inspired by the seasons, favouring the local fishing industry and wild mushrooms from the Varois backcountry. Today, chef Mathias Dandine commands the ovens of the Roches restaurant, obtaining his own Michelin star.
