The perfect pizza sauce is rich and thick and aromatic. It’s so good you only need to spread it on pizza dough and sprinkle cheese on top and it can already make a luscious pizza. Pre made pizza sauce is usually disappointing but it only takes a few ingredients to enhance it and give it an edge. In this recipe, pre made pizza sauce is enhanced with tomato puree, burgundy wine, oregano, basil, onions, and garlic. You can use homemade tomato puree or those the canned varieties, just choose a good brand, preferably Italian. Depending on the saltiness of the pre made pizza sauce, you will have to adjust the seasoning according to your taste.
Crushed or ground tomatoes are also fabulous to give the pizza sauce some texture. You can buy canned whole tomatoes and puree this in the food processor, pulsing according to the thickness you desire. You can also crush it in a saucepan using a masher. Of course if you prefer a smooth version, you can use tomato sauce or tomato puree. To make tomato puree out of fresh tomatoes, you need to blanch the tomatoes in hot boiling water so that the skin is easier to remove.
Use fleshy sweet tomatoes like Plum or Roma, which are not too watery and are ideal for making tomato paste. After blanching the tomatoes, immediately dip them in ice-cold water and peel the skins. Cut the tomatoes in half and take the seeds out. Puree the tomatoes in a blender if you want something raw and fresh tasting or simmer them with some water in a saucepan until they disintegrated and become a rich and thick sauce if you want something with more depth. The Burgundy wine added in this recipe give the pizza sauce a hint of gourmet and makes the pizza taste more fancy.
In a saucepan, heat the oil. Add the chopped onion and garlic and saute until tender and transparent.
Add all the remaining ingredients, one by one, stirring constantly. Cook over low heat for about an hour.
Transfer to an airtight jar and refrigerate until use. Keep up to 1 to 2 weeks.
