Stuffed bell peppers slathered with bubbling cheese are mighty delicious but they can take quite some time and a lot of effort to prepare. In this recipe adapted from Kroger, you get all the delicious flavor of stuffed bell peppers without the hassle. Lean ground beef are sautéed with chopped red and yellow peppers and onions and seasoned with garlic powder and Italian seasoning. It is layered in a casserole dish together with diced tomatoes, rice, and sharp cheddar cheese and flavored with Worcestershire sauce, Italian seasoning and tomato sauce. The result is a simple and complete meal perfect for busy weekdays or lazy weekends.

This recipe is comparably healthy compared to most casserole recipes. It makes use of lean ground beef, low far sharp Cheddar cheese, and fat free Italian seasoning.

This is a true comfort food that can be enjoyed every month or every other week without guilt. The flavors of the cheese, tomatoes, sweet bell peppers, and savory beef bubble and simmer as they cook together in the oven. The meat and vegetables need to be cooked first before they are layered in the casserole dish and baked in the oven. This is great since you can drain off the excess fat from the beef after it is cooked in the pan on the stove. This also prevents the casserole from becoming a soggy mess.

Since this casserole fish already contains starch in the form of rice, you can serve it as is as a complete meal, which is the ultimate one dish meal. You can use white or brown rice to make this recipe. Brown rice is healthier than white rice but tends to be drier and coarser when cooked. The seasoning from the tomato sauce and Worcestershire sauce, however, will seep in to the rice and make it fluffy and flavorful. Make sure to use instant rice, which cooks a lot faster.

  • 1 lb. lean, ground beef

  • 1/3 cup chopped onion

  • 2 cup coarsely chopped red and yellow peppers

  • 1/2 tsp. garlic powder

  • 1/2 tsp. coarse ground black pepper

  • 1 can (14 oz.) diced tomatoes, drained

  • 1 1/2 cups instant rice, white or brown

  • 1 tsp. Worcestershire sauce

  • 1 tsp. fat-free Italian seasoning

  • 8 oz. low-fat sharp Cheddar Cheese, divided

  • 1 can (15 oz.) tomato sauce

Preparation Instructions


Preheat oven to 375 degrees. In a large skillet or saucepan, over medium-high heat, sauté ground beef, onions, and peppers for about 10 minutes, or until the beef is browned and the vegetables are tender.


Remove from heat. Drain off excess fat and season meat mixture with garlic powder and pepper.


Stir in tomatoes, rice, Worcestershire sauce and Italian seasoning. Add 1 cup cheese, and stir.


Spread mixture into a 13x9-inch casserole dish. Top with tomato sauce and remaining cheese.


Bake, uncovered, for 20 minutes, or until cheese is melted and bubbly. Let stand 5 minutes before serving.
