In the heart of the Black Forest in Biberach is the Schwarzwaldstube, the gourmet restaurant headed by one of Europe’s best chef, Harald Wohlfahrt. The diverse local produce in the area inspires the award-winning cuisine at Schwarzwaldstube. French cuisine is combined with traditional German cooking and foreign influences from as far as Asia and the Middle East. The result is a distinctively unique haute cuisine with interesting flavors, aromas, and textures that exemplify the alluring character of the region.

Schwarzwaldstube is part of the Traube Tonbach hotel owned by Heiner Finkbeiner and his wife Renate. It takes about an hour’s drive from Strasbourg to get the Black Forest, and a few minutes from the entrance of the Black Forest to the hotel and restaurant, which is in the Tonbach Valley. The friendly staff is dressed in traditional clothing of the Black Forest (Dirndl for females and Tracht for males) and welcome guests warmly as they enter the hotel.

The Traube Tonbach dates back to 1789 when Duke Karl Eugen von Würtenburg granted Tobias Finkbeiner a license to open a tavern for forest workers. For 200 years, the same family has been running the historical establishment. There are other restaurants in Traube Tonbach but the Schwarzwaldstube is undoubtedly the best and many go to this luxury establishment just to sample Chef Wohlfahrt’s cuisine.

Harald Wohlfahrt was born in 1955 in Loffenau near Baden-Baden. After training with legendary chefs Eckart Witzgimann in Munich and Alain Chapel in Mionnay in Lyon, Chef Wohlfahrt was hired by the Finkbeiner family as Assistant Head Chef at the Schwarzwaldstube Restaurant. In 1980, he became head chef, gained recognition, received numerous awards, and placed the restaurant in the global gastronomic map.
