  • 1.1 lbs. potato puree
  • 3 tbsp. flour
  • 4 eggs
  • 1 pint cream
  • Salmon, 48 squares of 2x2 inches, cut in small slices
  • 2.1 oz. caviar
  • 1 lemon peel
  • 1.76 oz. clarified butter
  • 1 tomato

Cooking recipe preparation instructions
  1. The crepe is a very thin pancake. It comes from the Normandy and Brittany regions.
  2. Mix the potato puree and 3 spoons flour. Add the eggs, one-by-one, and the cream, until the dough has the typical crepes consistency.
  3. Let it rest.
Salmon preparation:
  1. Cut the salmon in small squares and dispose one spoon of caviar between two slices of salmon.
  2. Cook the small crepes, on which you place the salmon and caviar slices, in a pan with butter.
  3. Cook each side.
Sauce preparation:
  1. the lemon peel in butter and season it according to your taste. Strain the sauce.
Ending:
  1. Place two or three crepes on a serving dish and add the sauce as well as the small tomato slices for the decoration.
