  • 1 duck
  • 1 celery
  • 1 green cabbage
  • 3 red beet
  • 3 onions + 1 unpeeled
  • 3 carrots
  • 2 garlic cloves
  • 2 tomatoes
  • 6 small potatoes
  • 1 bunch of dill

Cooking recipe preparation instructions
  1. Prepare a duck fond with the duck's carcass.
  2. Keep the fillets and legs for another recipe.
  3. Put the duck's carcass in a large saucepan with 1.3 cups water, 1 onion (with its peel), and 1 carrot. Bring it to boil. Skim. Let it cook for 2.5 hours.
  4. Cut the onions and beet a la julienne, meaning: into thin, long stripes. Stew in butter with some water. Cover with a lid.
  5. Mix the cabbage, carrots and celery a la julienne.
  6. Cook the potatoes in water. Peel them.
  7. Afterwards, cut them into cubes.
  8. Prepare the tomatoes and crush the garlic.
  9. Strain the duck fond and pour it over all the other ingredients. Cook for 20-25 minutes.
