  • 2 green apples
Green apple sherbet:
  • 0.99 lbs. green apples
  • ½ lemon juice
Syrup:
  • 2.1 cups water
  • 0.66 lbs. sugar
  • 2.47 oz. invert sugar (trimoline)

Green apple sherbet:
  1. Wash, empty and freeze 0.99 lbs. green apples. Mix the apples with their skin. First, add the lemon juice, then about half of the syrup. Put it in a Chinese tin-plate
  2. Apple crystalline:Wash 2 green apples and cut them in thin slices. Soak the apple slices in the rest of the syrup for about 5 minutes. Let it gently boil on a small flame. Withdraw the apples from the syrup and cut them in half, following their height. Dispose them flat on an anti-adhesive plate. Dry the crystalline in the oven at 120 degrees F during the whole night.
Presentation:
  1. Place a sherbet scoop in the middle of the serving dish and the apple crystalline around it. Melt some sherbet and aromatize it with some Calvados. Put the apple tale in the centre.
