Madeleine is the French word for Magdalene. It refers to a shell-shaped cookie.
  1. Melt 0.44 lbs. butter in a pan until it obtains a hazelnut-colour. Filter it, before pouring it over the honey, and stir well.
  2. Mix flour, powdered sugar and almond powder.
  3. Beat lightly the egg white.
  4. Once honey and butter have cooled down, mix flour, powdered sugar, almond powder, and the beaten egg white.
  5. Cook in a well buttered Madeleine form at 356 degrees F for about 4 minutes.
