Cooking Recipe Ingredients
Tartar:
  • 0.44 lbs. quince
  • Some rosemary powder
  • Some pepper (séchuan)
  • 0.7 oz. powdered sugar
  • 1 gelatin leaf
  • 0.88 oz. cream
Coconut sherbet:
  • 0.28 lbs. coconut puree
  • 0.35 lbs. water
  • 2.5 oz. sugar
  • 0.4 oz. glucose
  • Curry

Tartar:
  1. Soak the gelatin in cold water.
  2. Cook the quinces in water for about 15-20 minutes.
  3. Drain them and put them in the mixer to obtain a puree.
  4. Add rosemary, pepper and powdered sugar. Then, add the gelatin into the warm quince puree.
  5. Let it cool down. Then, incorporate the cream.
Coconut sherbet:
  1. Bring all the ingredients to boil. Then, let it cool down and spin it in an ice-cream machine until obtaining a temperature of 16 degrees F.
  2. Keep it in a freezer at 5 degrees F.
  3. When you serve it, prepare some tartar scoops.
