Cooking Recipe Ingredients
  • 0.88-1.3 lbs. goose liver
  • 4 tbsp. thickened cream
  • 100 g ravioli dough (home-made, or from a store)
  • 3.5 oz. fowl stock
  • 1/2 lemon
  • 1 yolk, beaten

  1. Cut pieces of about 1 oz. goose liver each. Add salt and pepper. Using a paintbrush, paint the surfaces of the ravioli with the icing (one egg, beaten, lightly salted).Put the goose liver in the centre of the side of the ravioli that has not been glazed. Then, put the other side on top of it. Pinch the ravioli edges by turning them between your fingers. Cut the ravioli with a punch or glass so that they are hermetically closed. There must not be any air bumps inside.
  2. Cook the water and the bouillon. When it boils, add the ravioli for about 2 minutes.
  3. Pour the other half of the fowl gravy into a saucepan. Boil down. Add 2 tbsp. of cream. Continue to boil down. In another saucepan, boil down the rest of the cream with the lemon juice.
  4. Place 3-4 ravioli on each concave plate. Emulsify the fowl gravy with a mixer and cover the ravioli with this sauce.
  5. The lemon sauce, which is much clearer, serves as decoration. Thus, you can play with the contrast of the colours!
