  • Soak the beans for 24 hours.
Cooking Recipe Ingredients
  • 20 scallops
  • 0.85 cups pure cold-pressed olive oil
  • 4 tomatoes
  • 3 carrots
  • 1.76 oz. ventrèche (meager bacon)
  • 0.33 oz. Tarbais beans
  • 2 onions
  • 1.76 oz. Parmesan cheese
  • Salt, pepper
  • Mixed bouquet greens (thyme, laurel, celery, leek)
  • 5 g flour

Cooking recipe preparation instructions
  1. Let the Tarbais beans soak 24 hours in water. Crack and prepare the scallops. Do not wash them.
  2. Then, cook the beans in water with carrots, onions, the mixed greens bouquet, salt and pepper.
  3. While waiting put the medley of carrots, onions, tomatoes and ventrèche in a sautoir (pot with a long handle). Boil down, season, and add the mixed greens bouquet.
  4. Then, add the Tarbais beans and let them simmer for about 15 minutes to obtain a type of ragout.
  5. Mix the parmesan powder with the flour sprinkle this mixture it in an anti-adhesive pan. Let it cook, and, in the middle of the cooking, turn these thin “pancakes†around. Once cooked, you can give the desired form.
  6. Put the scallops in a pan with olive oil and give them a nice colour.
  7. Place the beans in the center of the dish. Dispose the scallops around them, just like the thin parmesan pancakes and some of the cooking gravy from the beans.
