  • Green lemon peel

  • Pearl barley
  • Zucchini (brunoise)
  • Tomato (dice)
  • Yellow pepper (brunoise)
  • Fresh coriander, hacked
  • Peanut oil
  • Salt, pepper

  • Carrot
  • Black radish or turnip (Daikon)
  • Purple basil (decoration) or other

Cooking recipe preparation instructions
  1. First wash, then cook the pearl barley for about 10 minutes in the cocotte.
  2. Let it cool down and drain.
  3. Add the vegetables (brunoise and dice), coriander, and some oil. Salt.
  4. Prepare the red mullet fillets.
  5. Cut them into thin lines with about 0.2 in thickness (perpendicular to the fillet).
  6. Place the pearl barley salad in the center of the cold serving dishes, using round circles of about 1.6 in diameter and 1.2 in height.
  7. Place the red mullet stripes all around it to make it look like a sun. Thus the name for the recipe.
  8. Sprinkle with the special vinaigrette.
  9. Top the salad with carrot and radish. Decorate with fresh flowers and some chive.
  10. Finally, sprinkle the red mullet strips with sesame, poppy-seeds, crustacean powder, chive, high-quality sea-salt and pepper from the mill.
