  • 0.66 lbs. creme patissiere (vanilla-flavoured custard filling for pastries and cakes)
  • 0.66 lbs. whipped cream
  • 0.53 lbs. raspberry sauce
  • 0.33 lbs. wild strawberries
Jelly:
  • 0.85 cups water
  • 1 vanilla pod
  • 1 gelatine leaf
  • 2.8 oz. thyme honey

  1. Put 1.4 oz. red fruit sauce in each bowl and place it 20 minutes in the freezer.
  2. Insert the whipped cream and the crème patissière in order to obtain a light cream. Once the red fruit sauce is ready, cover it with 3.5 oz. of this light cream, place the wild strawberries in circles on top of it and store in a cold place.
  3. Boil the water and the vanilla. Then, off the flame, add thyme honey and stir. Soak the gelatine in cold water and add it. Stir with a beater and store it cold. Next, take a soup spoon and pour delicately the thyme honey jelly over the fruits, about 3 good spoons per person.
  4. Put it for 10 minutes in the freezer and serve.
