Cooking Recipe Ingredients
  • 4 slices duck foie gras, 3.5 oz. each
  • 2 peaches or 2 nectarines
  • 1 glass port-wine
  • 1 glass white wine
  • 1.76 oz. butter
  • Some salt grains (Guerande salt)
  • Pepper (mill)

Cooking recipe preparation instructions
  1. Peel the peaches and saute in butter. Then deice them with white wine.
  2. Wait a few minutes and add the port-wine. Put them in the preheated oven (thermostate 6-7) for about 6 minutes.
  3. Put the goose liver escalope in a hot pan. Turn it around and let it cook for about 3 minutes in the oven, at the same temperature as above. (Cooking test of the foie gras: touching it with a finger, the liver must be particularily souple.)
  4. Take the peaches out off the oven and place them on a dish. Reduce the gravy. Put the liver on the peaches, the gravy around, without pouring it on them.
  5. Place some Guérande salt grains on the live rand add 2 tours with the pepper mill.
