Cooking Recipe Ingredients
  • Ground spices
  • 4 young pigeons, about 0.88 lbs.
  • 0.28 lbs. pigeon breast
  • 0.88 oz. foie gras
  • 0.18 oz. coriander
  • 1 star-shaped anise seed
  • 1 clove
  • 0.88 oz. foie gras (from the pigeon)
  • 0.18 oz. shallots
  • 0.53 oz. honey
  • 1 pint pigeon gravy
  • 0.28 lbs. wine vinegar
  • Salt, pepper

Cooking recipe preparation instructions
  1. Prepare the pigeons.
Stuffing:
  1. Take the pigeon breast. Hack it with the shallot, foie gras, foie gras from the pigeon, salt and pepper.
  2. Garnish the insides of the young pigeons with this stuffing.
  3. Bridez-les and roast them in the oven for 8 minutes.
  4. Remove them from the oven and let them rest.
  5. Cover them with a mixture of honey and ground spices. (See sauce below.)
  6. Put them again in the oven for another 3 minutes.
Sauce:
  1. Put the honey in a saucepan and deice with vinegar. Caramelize.
  2. Add the ground spices and moisten with the pigeon gravy. Let it cook 10-15 minutes.
  3. Strain and bind with butter.
Garnishing:
  1. Prepare 4 carrots (with greens), 4 turnips (with greens), 0.7 oz. gourmand peas and 8 small onions according to your taste. Mix.
Presentation:
  1. Place the young pigeons on each dish. Pour some sauce around them and make a small pile of vegetables. Serve the remaining sauce in a sauce bowl.
